The detail, illustration and photos you provide are so helpful. I'm trying to recreate sweet bean paste cake from a beloved NYC Chinatown bakery (now closed) but every recipe I've tried leads to a crispy somewhat hard pastry. The pastry I'm trying to replicate was flaky but soft and tender and almost all white. Any ideas on how to create that finish? Perhaps steam in the oven? I'd appreciate any help you could offer.
